
Job Summary
The Hong Kong Chef is responsible to establish a unique dining experience for a new 5 stars hotel opening in Surabaya, Indonesia. He or she will need to design, prepare, and present authentic and high-quality Chinese cuisine in menu offerings at the restaurant as well as banquets. This is a management role that requires strong knowledge in kitchen operation and supervising their respective culinary team, maintains hygiene standards, and ensures guest satisfaction through consistently exceptional dishes. The chef also contributes to menu innovation and staff training to maintain culinary excellence.
Requirements
- Minimum 5 years of experience as a Hong Kong Specialty Chef preferably from a premium Chinese restaurant
- Strong mastery of traditional Hong Kong dim sum cooking techniques including roasting, and wok cooking
- Proven leadership and kitchen management skills
- Knowledge of international food safety and hygiene regulations.
- Ability to work under pressure and manage time efficiently
- Basic English communication skill
- Creative, disciplined, detail-oriented, passionate about culinary arts
Key Responsibilities
- Develop and create authentic Chinese menus, maintaining five-star quality and presentation standards
- Prepare and cook traditional Chinese dishes such as dim sum, roasted meats, stir-fry, and wok specialties
- Ensure consistent flavor, portioning, and presentation of dishes in line with brand expectations
- Supervise and lead the kitchen team, including cooks, commis, and kitchen helpers, to ensure efficient daily operations
- Manage food stock, kitchen inventory, and control waste and food costs effectively
- Coordinate with the purchasing team to ensure the availability of high-quality ingredients
- Maintain strict hygiene and food safety standards in accordance with HACCP and hotel policies
- Provide ongoing training to kitchen staff to improve skills and maintain quality and efficiency
- Work closely with the Executive Chef for special menu development, culinary promotions, or themed events. Foster good communication and collaboration with service teams and the F&B management
