- Job Summary We are seeking a passionate and experienced Sous Chef specializing in Indonesian Cuisine to join our dynamic culinary team at The Trans Luxury Hotel Bandung. The ideal candidate will support the Executive Sous Chef in leading the TR Indonesian Kitchen, ensuring authentic flavors, high standards of food quality, and efficient kitchen operations, while delivering a refined luxury dining experience. Key Responsibilities Assist in leading daily kitchen operations for Indonesian Cuisine at TR Ensure consistency and authenticity of traditional Indonesian dishes Supervise food preparation and production to maintain quality and presentation standards Guide and train kitchen team members in culinary techniques and food hygiene Work closely with the purchasing team to ensure the use of fresh, high-quality ingredients Innovate and update Indonesian menu items in alignment with current culinary trends Ensure kitchen cleanliness, sanitation, and safety in accordance with HACCP and hotel standards Manage food cost control and minimize wastage Monitor staff schedules, kitchen efficiency, and task delegation Assist in planning for special events, banquets, and promotions involving Indonesian cuisine Ensure a positive, respectful, and team-oriented kitchen environment Requirements Minimum 3–5 years of experience in a similar role at a luxury hotel or high-end restaurant Deep knowledge and hands-on experience with traditional and modern Indonesian cuisine Strong leadership, organizational, and communication skills High standards in food safety, hygiene, and kitchen discipline Creative, detail-oriented, and guest-focused Able to perform under pressure and in fast-paced environments Familiar with kitchen inventory systems and cost control Proficient in Bahasa Indonesia; English is a plus
